Tim and Mark are proud to be the custodians of The Cottage Tavern, it’s their aim to make the local community and the wider area proud and to give everyone a pub they can love for anything from half a pint of ale, a three course meal and so much more.
Tim, Mark and Ryan are excited to introduce you to our daily changing blackboard menu and other news from the pub.
Tim was born in Nuneaton and grew up in Bedworth while his family ran a farm on the nearby Arbury estate. In his teens his family stopped farming and went on to run a Bed and Breakfast overlooking Lake Windermere. This is where Tim found his love for the industry leading him to study hospitality and catering at the North Warwickshire College.
He moved to Chipping Campden to work under Rob and Gill Greenstock at the Cotswold House Hotel eventually moving with them to become part of the team that won the UK Dining Pub of the Year at The Howard Arms in Ilmington.
Tim was also part of the opening team for The Fuzzy Duck in Armscote after which he joined The Royal Oak in Whatcote and was an important part of the team that was awarded a Michelin star.
Mark was born in Cornwall and grew up in a small hamlet on the Lizard Peninsula. He started as a cellar man at 19 at the local holiday park and moved up to work behind the bar at 20, before later becoming the bar manager.
He took a break from bar management and worked for a residential home for the deaf in Leamington Spa where he got his British Sign Language level 1, 2 and OCN level 3 qualifications. He moved to Wales where he was a senior carer. Mark returned to Cornwall, where he became bar manager for Parkdeans 3rd largest holiday park.
Mark moved back to Warwickshire and started working as manager for a pub in Stratford where he won the Camra Warwickshire Pub of the Year in 2019.
Head chef Ryan is originally from West London. He has always had a passion for cooking.
At they age of 22 Ryan applied for the Jamie Oliver Fifteen apprenticeship programme and was successfully accepted. After a one year apprenticeship course in professional cookery, he earned himself a Merit grade and was also awarded Apprentice of the year.
Ryan then worked under a Michelin starred chef at Bistro Bruno Loubet, for three years as well as The Falcon Inn in Denham and then Miller and Carter both in London and Stratford upon Avon. He is looking forward to creating new exciting and seasonal dishes for our blackboard menu.
